The story began back in the 1990s when Gail Mejia brought the best bakers in town to bake for London’s top chefs. Originally a wholesale and bread factory business it quickly flourished to become Gails bakery as we know it today. Gail’s bakery opened its first High Street store in London’s Hampstead back in 2005. Today, they have 50 bakeries in and around London specialising in using only the finest of ingredients, following traditional methods and baking extraordinary things with ordinary people. Gails aim is to play a part to bring humanity back into the food world and local communities which is reflected in the store designs and refits.
We provided Project Management services in role as main contractor to realise the new re-design of what is now Gail’s Bakery in Gloucester Road, London.
The design & build challenge and main intention of the project was to retain and re-use as much of the existing infrastructure already within the store. Once a careful demolition had taken place on the shop floor, we began by partitioning off areas of the original store to form the new designed layout; a new lighting scheme was introduced and the existing heating system revamped and updated to suit new requirements. Other works included removing one of the staircases to utilise the floor space of the small London Store, updating all appliances in the store including H&S equipment, new signage and electrical works throughout the store also received full interiors fit out, decoration and modern joinery fixtures and fittings including a stainless steel finished counter and servery area.
